Alcotec Fruit Turbo Yeast with enzyme contains a pure fermenting distillers strain of yeast which was chosen for its ability to retain many of the important fruit qualities. It also contains an enzyme for breaking down pectins in the fruit which could create a haze problem later. Fast fermenting, perfect for creating home distilled fruit liqueurs. Available in 60g sachets for consumer use, or in 25kg sacks for the alcohol industry.
To use Alcotec Fruit Turbo Yeast, prepare up to 25L of fruit mash, cool it below 30°C (86°F), stir in the sachet's contents, and ferment at 20-28°C (68-82°F) for 4-6 days, ensuring the liquid temp doesn't exceed 35°C (95°F), using it for clear, flavorful liqueurs

Step-by-Step Instructions
- Prepare Your Mash: Make your fruit mash and cool it down to a maximum temperature of 30°C (86°F).
- Add Yeast: Pour the contents of the Alcotec Fruit Turbo sachet into the mash and stir thoroughly.
- Ferment: Place the fermenter in an area with a stable temperature between 20°C and 28°C (68°F - 82°F).
- Monitor Temperature: Ensure the liquid temperature never goes above 35°C (95°F).
- Wait: Fermentation should be complete in about 4 to 6 days, resulting in a clear, haze-free liqueur thanks to the included pectin-breaking enzyme.
Tips
- Sugar for Higher Alcohol: For higher alcohol content (up to 18%), you can add sugar syrup in stages (200-300g per liter of must).
- No Airlock: Fermentation is vigorous; you may not need or want an airlock.
